Papaya Salsa

This recipe is great for grilled fish or chicken on a hot day. People go crazy for this when we serve it:

2Lb fresh ripe papaya, peeled, seeded, and cut into 1/4 inch dice
1-1/2 cups diced fresh pineapple
2 scallions, finely chopped
1 small garlic clove, minced
2Tbs fresh lime juice
pinch of salt
1/4 tsp black pepper

Mix all ingredients. Makes about 4-1/2 cups.
