It works great for us everytime.&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;ul&gt;&lt;li&gt;1 (12Lb.) fresh turkey&lt;/li&gt;&lt;li&gt;Kosher salt&lt;/li&gt;&lt;li&gt;Freshly ground black pepper&lt;/li&gt;&lt;li&gt;1 Large bunch fresh thyme&lt;/li&gt;&lt;li&gt;1 Lemon halved&lt;/li&gt;&lt;li&gt;1 Spanish onion quartered&lt;/li&gt;&lt;li&gt;1 Head garlic, halved crosswise&lt;/li&gt;&lt;li&gt;4 TBS. unsalted butter, melted&lt;/li&gt;&lt;/ul&gt;Directions:&lt;br /&gt;Preheat oven to 350 degrees F.&lt;br /&gt;&lt;br /&gt;Take the giblets out of the turkey and wash inside and out. Remove any excess fat and leftover pinfeathers and pat the outside dry. Place the turkey in a large roasting pan. Liberally salt and pepper the inside of the turkey cavity. Stuff the cavity with the thyme, lemon, onion and the garlic. Brush the outside of the bird with the butter and sprinkle with salt and pepper. Tie the legs together with string and tuck the wing tips under the body of the turkey.&lt;br /&gt;&lt;br /&gt;Roast the turkey for 2 1/2 hours, basting from time to time with pan juices, until the juices run clear when you cut between the leg and thigh. Remove the turkey to a cutting board and cover with foil; let it rest for 20 minutes. People go crazy for this when we serve it:&lt;br /&gt;&lt;br /&gt;2Lb fresh ripe papaya, peeled, seeded, and cut into 1/4 inch dice&lt;br /&gt;1-1/2 cups diced fresh pineapple&lt;br /&gt;2 scallions, finely chopped&lt;br /&gt;1 small garlic clove, minced&lt;br /&gt;2Tbs fresh lime juice&lt;br /&gt;pinch of salt&lt;br /&gt;1/4 tsp black pepper&lt;br /&gt;&lt;br /&gt;Mix all ingredients. The Picnic Pros had the privilege of catering for the team at Lonza. We served for 400 guests a All American Menu of BBQ Chicken, 1/4 Lb. Burgers, Hot Dogs and plenty of sides and salads.&lt;br&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:Arial;color:#663366;"&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:Arial;color:#663366;"&gt;There was also plenty of fun stuff for the employees and their families. There were moon bounces, obstacle course, dunk tanks, the fire department brought their truck and the fire dog. There was also face painting and balloon tying and of course the kids favorite, and mine too, the ice cream truck.&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:Arial;color:#663366;"&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family:Arial;color:#663366;"&gt;It really was a fun day for all and we enjoyed working with them. So a big thank you goes out to Tanya, Steve and the entire team at Lonza.
